Mackerel a la plancha

Ingredients

  • 4 mackerel
  • 3 peppers
  • 1 garlic clove
  • Parsley
  • Basil
  • Thyme
  • olive oil
  • 2 limes
  • 3 zucchinis
  • 4 to 6 potatoes
  • salt and pepper

 

Preparation

1. Peel the potatoes and pre-cook in boiling salted water. They will then be cooked en papillote a la plancha.

2. Prepare the mackerel. Raise the fillets or empty the fish to cook them whole a la plancha.
To lift the fillets: cut the belly of the mackerel to empty and clean it, then rinse it. Cut off the head, then incise the back, pressing the knife against the center bone, right down to the tail, to separate the fillets.
Arrange the mackerel in a large container.

3. Prepare marinade. Sprinkle mackerel fillets with lime juice. Dice the peppers and pour into the dish.
Add chopped garlic, parsley and basil. Season with salt and pepper and cover with olive oil. Cover with cling film and chill (if possible) for ½ h to 1 h.

4. Slice the zucchinis using a mandolin. Set aside in a bowl, add thyme, salt, pepper and olive oil.

5. Heat the plancha and, once hot, place the potatoes, previously prepared in foil.

6. Sear the zucchini on the plancha for about 10 minutes to keep them al dente. If you like them more cooked, adjust the cooking time. Set aside.

7. Sear the marinated mackerel fillets on the plancha. Be careful, it goes very fast, especially as they will already have been cooked a little by the lemon. A long back-and-forth is all it takes!
Set the fillets aside.

8. Pour the marinade into a small saucepan to cook on the plancha.
Arrange on a plate.
